A food grade high purity form of citric acid, this substance is typically used to control the acidity of mass quantities of beverages and candies that are manufactured on an industrial scale. It is typically reserved for adding to other solutions as a means of acidifying mixtures without the need for premixing or filtering to eliminate impurities that might affect the taste or composition of the beverage overall. The lack of impurities also allows for extremely specific and precise acidity levels necessary to maintain flavor profiles of popular beverages such as soft drinks, some wines and beers, and other mass produced beverages that must be produced in large batches without sacrificing their consistency. Typically, rather than extraction from fruit or mold, this form of citric acid is synthesized by exposing aconitic or isocitrate/allo isocitrate calcium salts to extremely high pressure conditions, producing citric acid in a near quantitative conversion via an apparent reverse non-enzymatic Krebs cycle reaction.
